It’s been forever since I last wrote a “Baking sunday! post! Unbelievable! Only this weekend I realized that baking is one of the thing I always mention and think about during the weekend, but unfortunately it’s also the one, I always forget to make time for!
So to break this “wheel” of baking purpose ( …ahah.. sorry I just finished watching the last GoT episode… the bad joke just had to tag along…ahah) with some actual goodies, I decided to challenge my self with a new “easy peasy” recipe… which by the way I have not tried myself before! YOGURT PANCAKES!
I must say that for been a new entry in my baking skills… everything turned quite well… I can improve the decorating or shaping part… but the taste was amazing… so let me brag a bit and say good job Jose! 🙂
Below is the recipe I followed, starting with the ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup milk
- 2/3 cup of low fat yogurt
- 2 tablespoons unsalted butter, melted, or vegetable oil
- 1 large egg
Preheat oven to 180 degrees; have a baking sheet or heatproof platter ready to keep cooked pancakes warm in the oven.
In a small bowl, whisk together flour, sugar, baking powder, and salt; set aside.
In a medium bowl, whisk together milk, Yogurt, and egg. Add dry ingredients to milk mixture; whisk until just moistened (don’t worry a few small lumps are fine).
Heat a large nonstick pan. And start the cooking phase!:)
For each pancake, spoon 2 to 3 tablespoons of batter onto skillet, using the back of the spoon to spread into a round shape … ( or whatever shape…happens … it’s fine….ahahaha)
Cook until surface of pancakes have some bubbles and a few have burst (1 to 2 minutes). Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter
To keep them warm …cover loosely with aluminum foil, and keep in the preheated oven.
Once you completed the cooking of all your pancakes, go crazy with the toppings! After all that is the best part, don’t you agree?
I topped mine one with some blueberries and some jam berries and the other with nutella and melted “frambroise chocolate”…
I really recommend this recipe on those days when you want to try a sweet treat but have very little time!
